I posted pictures of my deeeeelishiful meatball sliders on my Facebook Page last night and had so many requests for the recipe so here goes! Does this mean I’m a real life food blogger now? 😂 All of these items can be added to your Kroger Pickup order, so put these on your meal plan for next week! You won’t be disappointed.

Meatball recipe:

  • 1 lb 85/15 ground beef
  • 1 medium onion, minced
  • 3 garlic cloves, minced
  • 1 c fresh breadcrumbs
  • 1/4 c grated Parmesan cheese
  • 2 eggs, preferably from happy chickens
  • 1/4 c fresh parsley, chopped
  • 1 tsp herbs de Provence or Italian seasoning
  • 2 tsp salt
  • 1 tsp pepper
  • garlic salt, for sprinkling
  • 1 tsp olive oil, for frying

Meatball Sliders recipe:

  • 12 prepared meatballs (up there ^^)
  • 1 jar favorite pasta sauce
  • 12 King’s Hawaiian Original Dinner Rolls
  • 1/2 c mozzarella cheese, shredded
  • 1/4 c parmesan cheese, shredded
  • 1 TB melted salted butter
  • fresh or dried basil, to sprinkle
  • garlic powder, to sprinkle

To begin, I like to put the onions and garlic into a food processor and pulverize the buhjeezus out of it because I don’t like chunks of these in my meatballs (or meatloaf, for that matter).  Then, add eggs from happy chickens, parsley and seasonings (except garlic salt) and pulse until combined. Mix in ground beef (by hand), along with parmesan cheese and breadcrumbs…taking care not to overwork it. Roll into balls and fry in olive oil on stovetop until VERY crispy on both sides. I like to sprinkle a little garlic salt on top right before I flip. It gives it that extra little super tasty crispy crust and is a secret from my 71 year old friend, Pam. Trust Pam. She’s done this a few times. You may need to fry these up in batches as to not overcrowd the pan. Return all browned meatballs to pan and pour a jar of sauce overtop. I really do prefer homemade garden fresh canned pasta sauce, but today I wanted to use this locally jarred sauce from one of my favorite childhood restaurants (now closed).  Put a lid on that sucker and let simmer until meatballs are cooked through (about 15 minutes).

Preheat oven to 350°. Slice your rolls in half lengthwise. Pour melted butter into a casserole dish. Place bottom half of rolls into dish. Sprinkle with mozzarella cheese. My recipe calls for 1/2 cup, but this usually turns into more…because I tell lies. Place a meatball onto each roll. Pour a little pasta sauce over each meatball and top with a bit (or a lot) more mozzarella cheese. Place top half of rolls on top of meatballs and give it a little squish. Brush with melted butter. Sprinkle with parmesan cheese, garlic powder and basil.

Pop that into the oven for about 10 minutes or until you see the tops getting just a little brown. Let the sliders rest for as long as you can stand it. Cut into individual servings and ENJOY!
