So if you use 2 of the $2/1 toothpaste coupons for the pro-health toothpaste, and you buy 5 tubes, how do you get these for free? (I'm still learning :))

Good question! You will also need to buy 3 other items included in the Mega Sale to get the 2 toothpastes at the $1.99 price. Katie does explain this in the video.
