We are just a family of 3, and cupcakes and cakes always go bad before we can finish them, BUT my husband came up with a brilliant solution! Most cake mixes can be cut into third (all of the ingredients are easily thirded and the mix itself contains 3 cups), so we make a third at a time- It makes about 8 cupcakes- Two nights worth for us, and then we can take a break on cupcakes until we want more!
