I make tacos with baked fish and homemade fresh peach salsa
We are constantly changing up taco night and it depends on whatever we have available. I can our free range chickens we raise so we always have chicken available and some nights we’ll just use rice seasoned with a taco packet. We especially love tacos at this time of year when our garden is overflowing with fresh veggies! We have tacos regularly and they never become tiresome because we are always doing something different with them.
I make my own seasoning! Yum!

Tacos are a mainstay in our dinner rotation. We experimented this summer by experimenting with ground chicken and ground turkey. We also incorporated fresh veggies and herbs from the local farmer’s market. We were on a mission to reduce our sodium intake. Thanks Old El Paso for a lower sodium version of the seasoning packet!

My twist for taco night is to use the leftover taco packets from Taco Bell to add a little extra zing to my tacos.
I don’t eat meat so I either make refried bean tacos or Quorn brand meat crumbles is good mixed with taco seasoning.

I like to cook refried beans in with the taco meat. It is really yummy!
Sometimes we will make pizza tacos. We cook the meat (without the beans for this one) and mix in some tomato sauce and shredded cheese and top with mini pepperonis!
We put refried beans or pork and beans in the tacos. My husband’s grandma used pork and beans and he likes them that way! Plus we don’t have to use as much meat and are still full!

I love how easy tacos are and how everyone can have what they want on it.
My twist on tacos is a hard shell with meat and fixings then take a soft shell spread refried beans on it and “glue” it to the outside of the hard shell. Soft and crunchy taco yum!

we don’t really have a change up on taco night. I usually just make a taco bar. I eat a taco salad, my kids eat “taco quesadillas” and my husband has a “not so traditional” hard taco (he puts mayo on his shells)

My family LOVES tacos! Some of our favorites are oven baked tacos – stuff a hard shell with meat (we use ground turkey and Old El Paso or Kroger bran seasoning), refried beans, and cheese, and bake at 350 until the cheese melts. Add toppings & voila! We also love Taco Stuffed Shells! Make a mixture of ground turkey, taco seasoning, chopped onion, and cream cheese. Stuff into prepared jumbo shells. Put salsa on the bottom of a casserole dish, place shells, cover with taco sauce, top with cheese, and bake at 350 until the cheese is melted. They are delishhhh!
My twist is homemade salsa mixed with the meat.

Whenever I make chicken for enchiladas or beef for rolled tacos we freeze some for tacos – this gives our “meat” a change up. We also always have flour and corn tortillas that way if you really want a “burrito” instead of a taco you can make one!

I like to mix it up by using different “meat”. When I want to go meatless, I roast diced potatoes and add taco seasoning to season them and use that to fill the taco shells.
